Found in the Himalayan foothills, kala namak is mined and then heated with charcoal and herbs, giving it a sulfurous, savoury aroma. It is umami-rich, smoky and tangy. It has lower sodium than regular table salt, making it ideal for those on a low-salt diet, as if its taste wasn’t enough of a reason to seek out this salt.
